Building a Joomla site in a sub directory.......

This answer seems obvious but I still want to make sure before I go around playing with things and messing it all up.
Can I install Joomla in a sub directory of a site and then simply transfer it over to the main directory when it is all up and running?

Is it really as simple as that or are there some things I should know before hand?

I want to build the Joomla site without taking the old site offline until I am happy with the Joomla site.
